Ingredients

For the Curry:

  • 2 medium potatoes (peeled and diced)
  • 2 cups cauliflower florets
  • 1 large onion (finely chopped)
  • 1 large tomato (finely chopped)
  • 1–2 green chilies (chopped)
  • 2 tablespoons ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala or Aloo Gobi masala
  • Salt, to taste
  • 2 tablespoons oil
  • 1 tablespoon butter (optional, for richness)
  • 1 tablespoon lemon juice
  • 1/4 cup fresh coriander leaves (chopped)

Instructions

  1. Cook the Potatoes and Cauliflower:

Boil or steam the diced potatoes and cauliflower florets until just tender. Do not overcook. Drain and set aside.

  1. Prepare the Masala Base:

Heat oil (and butter, if using) in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown.

  1. Add Flavor:

Add ginger-garlic paste and green chilies. Sauté for 2 minutes. Then add chopped tomatoes and cook until soft and the oil begins to separate.

  1. Add Spices:

Add turmeric powder, red chili powder, coriander powder, and garam masala. Cook for 1–2 minutes until aromatic.

  1. Combine and Cook:

Add the boiled potatoes and cauliflower. Mix well to coat them with the masala. Cook on a low flame for another 5–7 minutes, stirring occasionally. Add salt to taste.

  1. Finishing Touch:

Add lemon juice and chopped coriander leaves. Mix gently and turn off the heat.

Serving Suggestion:

Serve hot with roti, paratha, or steamed rice. It also pairs well with curd or pickles.
