- Salt, to taste
- Water, as needed to form the dough
For the Sabzi (Curry):
- 1 large onion (finely chopped)
- 1 large tomato (finely chopped)
- 1 tablespoon ginger-garlic paste
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt, to taste
- 1/4 cup fresh coriander leaves (chopped)
- 1 tablespoon lemon juice
Instructions:
For the Gatte:
- Prepare the Dough:
In a mixing bowl, combine gram flour, baking soda, ajwain, cumin seeds, red chili powder, turmeric powder, and salt. Add 1 tablespoon of oil and mix well. Gradually add water, a little at a time, and knead into a smooth, firm dough. Let it rest for 10–15 minutes. - Shape and Cook the Gatte:
Divide the dough into equal portions and roll them into thick cylindrical logs. Bring a pot of water to a boil and gently drop the gatte into it. Cook for 8–10 minutes, or until they float to the surface. Remove, let them cool slightly, then cut into bite-sized pieces.
For the Sabzi:

Heat oil in a pan over medium heat. Add cumin seeds and allow them to splutter. Add chopped onions and sauté until golden brown. - Add Tomatoes and Paste:
