Delight in Spices of Gatte Ki Sabzi

Ingredients:

For the Gatte (Gram Flour Dumplings):

  • 1 cup gram flour (besan)
  • 1/4 teaspoon baking soda
  • 1 tablespoon oil
  • 1/2 teaspoon ajwain (carom seeds)
  • 1/2 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • Salt, to taste
  • Water, as needed to form the dough

For the Sabzi (Curry):

  • 1 large onion (finely chopped)
  • 1 large tomato (finely chopped)
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • Salt, to taste
  • 1/4 cup fresh coriander leaves (chopped)
  • 1 tablespoon lemon juice

Instructions:

For the Gatte:

  1. Prepare the Dough:
    In a mixing bowl, combine gram flour, baking soda, ajwain, cumin seeds, red chili powder, turmeric powder, and salt. Add 1 tablespoon of oil and mix well. Gradually add water, a little at a time, and knead into a smooth, firm dough. Let it rest for 10–15 minutes.
  2. Shape and Cook the Gatte:
    Divide the dough into equal portions and roll them into thick cylindrical logs. Bring a pot of water to a boil and gently drop the gatte into it. Cook for 8–10 minutes, or until they float to the surface. Remove, let them cool slightly, then cut into bite-sized pieces.

For the Sabzi:

  1. Prepare the Masala:
    Heat oil in a pan over medium heat. Add cumin seeds and allow them to splutter. Add chopped onions and sauté until golden brown.
  2. Add Tomatoes and Paste:
    Add ginger-garlic paste and cook for 2 minutes. Then, add chopped tomatoes and cook until soft and oil starts to separate.
  3. Add Spices:
    Add turmeric powder, red chili powder, coriander powder, and garam masala. Cook for a minute until fragrant.
  4. Add Gatte:
    Add the sliced gatte to the masala. Stir gently and cook for 5–7 minutes, allowing the dumplings to absorb the flavors.
  5. Adjust Consistency:
    Add water as needed to achieve the desired curry consistency. Simmer for 10 minutes.
  6. Garnish:
    Add chopped coriander leaves and lemon juice. Mix well and remove from heat.

Serving:

Serve hot with chapati, naan, or rice. Garnish with extra coriander leaves if desired.
