Ingredients
For the Bhaji (Vegetable Curry):
- 2 medium potatoes (boiled and mashed)
- 1 cup mixed vegetables (carrots, peas, cauliflower, beans)

- 1 bell pepper (finely chopped)
- 1–2 green chilies (chopped)
- 2 tablespoons ginger-garlic paste
- 2 tablespoons Pav Bhaji masala (or garam masala)
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt, to taste
- 1 tablespoon butter
- 2 tablespoons oil
- 1/4 teaspoon cumin seeds
- 1 tablespoon lemon juice
- 1/4 cup fresh coriander leaves (chopped)
For the Pav (Bread Rolls):
- 8 pav buns
- 2 tablespoons butter (for toasting)
Optional Garnishes:
- Finely chopped onions
- Lemon wedges
- Fresh coriander leaves
Instructions
For the Bhaji:
- Cook the Vegetables:
In a pressure cooker or large pot, boil the mixed vegetables until soft. Coarsely mash them once cooked. - Prepare the Masala:
Heat oil and butter in a pan over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown. - Add Ginger-Garlic Paste & Tomatoes:
Add the ginger-garlic paste and sauté for 2 minutes. Then add chopped tomatoes and cook until soft and oil separates. - Add Spices:
Stir in turmeric powder, red chili powder, and pav bhaji masala. Cook for 2 minutes until aromatic. - Add the Mashed Vegetables:
Add the mashed potatoes and mixed vegetables. Mix well and cook for 5–7 minutes. Add salt to taste. - Simmer and Adjust:
Add water if needed to adjust the consistency. Simmer on low heat for 10–15 minutes, allowing the flavors to blend. - Finish:
Add lemon juice and fresh coriander leaves. Stir and keep warm.
For the Pav:
- Toast the Pav:
Slice the pav buns and butter them generously. Toast them on a hot tawa or skillet until golden and crisp.
Serving:
Serve the bhaji hot with buttered pav buns. Garnish with chopped onions, lemon wedges, and fresh coriander.
